雨垂れ石をも穿つ

The restaurant’s name “Ugatsu” comes from the proverb, “steady raindrops bore a hole in stone”. The restaurant is the representation of sushi chef Tsuyoshi Sasaki’s long dedication to the craft.

Steady raindrops resemble steady efforts of a sushi chef who has mastered sushido (way of sushi).

店名の「うがつ」は「雨垂れ石をも穿つ」ということわざが大将である佐々木強の鮨職人としての身上と重なる事から名付けられました。

一滴の水も長い年月をかければ石にも穴をあける事ができる。 雨垂れが石に滴るように地道な仕事を積み重ねた鮨職人は鮨道を穿つ。
